Description
Bay leaves are widely used in cooking, especially in stews, soups and sauces. The leaves add flavour to dishes but are not to be eaten themselves and are often removed before serving. The plant is a large shrub and the leaves are leathery, glossy and dark green in colour. It also produces a yellow-green flower with black berries from female plants. Bay shrubs are drought tolerant when established and prefer mild winters so may not survive in harsh frosts.
